  • Happy Wednesday, readers! You can read our past Health and Wellness posts on the blog.

    It's hard to believe that a year has gone by and this is the last of our Health and Wellness series. To wrap it all up, I thought we needed something big and important. To me, there is nothing bigger than Carpe Diem which is a Latin phrase meaning to seize the day. Everyday is special. Everyday is gift. We should be living life to its fullest. If you want to do something, do it. If you don't like your job, find a new one. If you want to change something, change it. Don't wait around for some other time. The time is now.

    I found these words which I absolutely love. Read them and see if you are not inspired to love your life and achieve your dreams!

    Every Monday, I would love to know what we are eating for dinner every night that week AND have all the ingredients on hand. Perhaps, even pre-making some items on the weekend. This doesn't seem that difficult but its been a challenge for me. I want to become a serious meal planner. Meal planning has so many advantages. Here are a few that make me jazzed up about it:

    * You eat healthier because you've planned out everything in advance instead of waiting until you come home starving (and are less likely to make good choices or have necessary ingredients on hand)
    * You eat healthier because you aren't going out to eat
    * You save money by not buying food that goes to waste
    * You save money by planning your meals around sales and coupons
    * You are happier knowing that you have a plan for the week and won't need to scramble to feed your family
    * You can do prep ahead of time (another day), reducing the time spent in the kitchen on weekdays
    * Your family always knows what's for dinner and doesn't have to keep asking

    There are so many free printables on the web to aid in meal planning (like the cute one below). I love the idea of framing one, placing it in the kitchen, and using a wipeoff marker each week to display "the plan".

  • I keep telling myself that it will take an hour tops on the weekend to plan my meals, a couple hours to shop, and then lots of happiness during the week when I no longer have to stress about what's for dinner. Anyone have a system that works for them? Please share!

    Like Jennifer, after reading The Happiness Project, I too have gotten the itch to improve little things in my life. For me, the self-realization that I was part packrat and part clutterer was a big one. I'm definitely not a hoarder (which you might be thinking), but I knew that I could benefit from a little organization in my life. I dreamed of the day when I would open a drawer, know EXACTLY what was inside of it before opening, and could smile at how beautiful the INSIDE looked. Well friends, I think I'm on my way. I have been working my way through the house and doing one thing at a time (well, not always because sometimes I get distracted by another problem area :)). So far, I've wrangled our DVD collection, made sense of the inside of the family room ottoman, tackled the horrid filing cabinet with its mountains of paper, made it much easier to find food in the pantry and cleaned out the fridge. It's feeling so good, I don't want to stop! It's amazing how clearing out clutter can really clear the mind and make you happier.

    I have recently gotten hooked on some great organization blogs. Natalie pointed me to one of my now favorites, iheartorganizing.blogspot.com. This girl is amazing! She organizes with a passion but even better, she makes everything so pretty in the process. She re-purposes items she already has on hand, does a million DIY projects, and even gets her husband involved in the house decorating/projects. The photo below is from her blog. It was a reader feature of a fabulous pantry furnished entirely with dollar store items. I fell in love!! I don't think mine will ever look this pretty but a girl can dream, right?

  • To me, this next one is the perfect freezer. These bins corral all kinds of half-eaten freezer bags. They would be perfect for all the purees I've been making.

  • It feels amazing to get organized. I think the hardest part is getting started. After that, you feel so good about the first project that you can't wait to start the next! If any of you have any great blogs you follow or organizing tips, please share!

  • Going out to lunch soon? Keep reading! You can read our past Health and Wellness posts on the blog.

    I love going out to eat, but what I don't love are the high calories and fat lurking in everything! Luckily, along with the mandatory publishing of nutritional information, many restaurants are offering "light" options. Sometimes they are available on a separate menu but usually they are marked with a symbol within the standard menu. I was recently dining at The Cheesecake Factory and came across their SkinnyLicious menu. Don't these sound great?... Beets With Goat Cheese, Herb Crusted Salmon, and Petite Grilled Tenderloin of Beef?

    On your next lunch outing, see if you can spot the light options. Give them a chance; they may surprise you!

  • One last thing... watch out for salads. Often, the dressing makes this a much worse option than most others. When in doubt, ask to see the nutritional information.
